Noodle 101 is a small, family-run noodle bar tucked inside Carmarthen Market. We bring the bold, vibrant flavours of South East Asian street food to West Wales - one steaming bowl at a time.
Every broth is home-made and simmered for hours, every dish is freshly prepared to order, and every recipe is rooted in genuine heritage - drawing on the home cooking and street stalls of Thailand, Japan, Korea, Vietnam and China.
We grew up with the flavours of our motherland, and the recipes we serve have been handed down through the generations. That's how you taste the real thing - authentic ingredients, true flavours, and food cooked the way it's meant to be.
